Two salads in a row? Well I must say I am a bit of a salad fan.. and you’ll know more about my obsession with salads with time.. There is something so good about salads, made right – for a moment even if you forget the health part, each bite of a nicely made salad is close to foodgasm.. and the combination becomes totally lethal when there is  well cooked and seasoned chicken that gets added to it.. I should have probably named this blog the ‘Salad Palate’ then?” Err.. too far fetched..

Even when I was young I looked for recipes that required no flame and my room-mate from 10 years ago (who is still a very dear friend by the way) was a huge a fan of my salad concoctions.

Anyways.. thats quite a lot of me in one post.. Lets get to the recipe then:

Ingredients:

Serves: 2

Boneless Chicken breasts – 2

Lollo Rosso Lettuce leaves – a handful

Spinach leaves – a handful

Onions – 1 medium

Cherry Tomatoes – 1.5 handfuls

Cucumber – 1

Italian seasoning – 3 tablespoons

Olive Oil – 1/4 cup + 1 tablespoon

Balsamic Vinegar – 2 teaspoons

Avocado oil – 3 tablespoons

Lime – 2

Chilli flakes – 1 teaspoon

Salt and pepper to taste

Directions:

  1. Cut the chicken breasts into cube size pieces
  2. In a mixing bowl add the chicken pieces, 1/4th cup olive oil, avocado oil, Italian seasoning, juice of 1 lime, salt, pepper and red chilli flakes.
  3. Mix well for for about 5 minutes and make sure all the chicken pieces are coated with the seasoning and the oils
  4. Cover the bowl with a plastic wrap and put it in the fridge for at least 30 minutes. I like to prepare in advance and leave the chicken to marinate for 4 hours to enjoy the flavour completely
  5. Chop the leaves, onions, tomatoes & cucumber & mix 1 tablespoon olive oil, balsamic vinegar, juice of 1/2 a lime & salt & pepper according to your taste
  6. Now heat a skillet & add the marinated chicken to it & cook for about  7 – 10 minutes  on a medium flame. There is no need to add extra oil as the marinated chicken already has enough oils added to it
  7. To serve – add the chopped mix to a serving bowl first & then add the chicken on top of it… mix well & add salt & pepper & more lime juice as desired
