Vegan Summer Popsicles – Four Flavours, Paleo, AIP

I couldn’t let the summer go by without sharing a popsicle recipe. It’s that time of the year when you gotta soak up the sun and ice cream, both in equal amounts. And if there is an option for a Healthy Summer Popsicles then who is to say no?

These popsicles use a combination of fresh coconut cream and full fat coconut milk and are super duper simple to make. Barring the Chocolate Vegan popsicle recipe – all the others (we have 4 flavours for you today) do not need an elaborate procedure. All you need is a blender along with some fresh fruits and a handful of ingredients.

Four Flavours

Mangoes are in season and hence a mango flavoured Vegan Popsicle had to be on the list. Chocolate is very popular with children and adult alike – so couldn’t not do the chocolate. There had to be an all season popsicle too – so strawberry made its way in and pineapple and turmeric popsicle is for those looking to maximize health in a #fun way.

All of the Vegan popsicles are also Paleo (coz duh) and barring the chocolate all the others are also AIP compliant.

Like most of my recipes these Vegan Popsicles are also a versatile. You can choose to add more fruit, sweetener and of course use more chocolate to suit your taste and play around accordingly.

Now, I know a lot of you might be skeptical about a coconut based dessert due to its peculiar flavour. However, you will have to trust me that these do not taste anything like coconut. These are all kid and picky eaters approved.

Getting kids involved

This is also a great activity do to with kids. I made my first batch of Mango popsicles with my daughter and she was so excited about mixing things and putting them into the popsicle mould. Kids absolutely love these things.

And, if you do not have a mould do not worry. Simply dump the liquid in a paper cup and secure it with a cling wrap tightly before pushing the the popsicle stick and you will end up with a cute looking mini bucket pops. The best part about the paper cup is that you can simply tear away the cup enjoy the popsicles immediately.

Vegan Chocolate Popsicles

Chocolate Popsicle

Indulgent and creamy these mousse popsicles are sure to steal your heart away

Ingredients
  

  • Full Fat Coconut Milk - 1 cup       
  • Fresh Coconut Cream - 1/4th cup
  • Tapioca Starch - 1 tbsp
  • Unsweetened Cocoa Powder - 1/4th cup 
  • Maple Syrup - 3 tbsps
  • Vegan and Dairy Free chocolate chips - 3 tbsps 
  • Himalayan Sea Salt - 1/8th tsp

Instructions
 

  • Start by mixing Coconut milk, unsweetened cocoa and tapioca in a skillet
  • Don’t turn on the burner until everything is well combined
  • Make sure there are no lumps
  • Once properly combined turn on the burner and add coconut cream and whisk until you get a smooth mixture
  • The heat will help you achieve a smooth mixture
  • Once smooth add in the chocolate chips and maple syrup and mix well until well combined
  • Do not walk away from the burner – you will need to keep whisking this as long as the skillet is on the burner
  • Lastly add in the Himalayan sea salt and whisk until you get your very first boil
  • Then turn off the gas and set it aside to cool completely
  • Spoon in the mixture into a popsicle mould or a paper cup
  • If using a paper cup seal it with a cling wrap
  • Freeze for atleast 6 hours or overnight
  • Devour!

Vegan Mango Popsicles

Ingredients
  

  • Chopped Mangoes - 2 medium sized
  • Strawberries - 3-4 (optional)
  • Coconut Milk: 1 cup
  • Coconut cream: 1/4th cup
  • Maple syrup: 3 tbsps
  • Himalayan Sea salt: 1/4th tsp
  • Vanilla Extract: 1/2 tsp

Instructions
 

  • Step 1 : Mix everything in a blender and blend until you get a smooth liquid
  • Step 2 : Pour into a popsicle mould or paper cup and freeze for at least 6 hours or overnight
  • Step 3 : Remove and Devour!
Strawberry Popsicles Vegan Dairy free

Strawberry Popsicles

A lovely regular flavour popular with all age groups. Make these all year round.

Ingredients
  

  • Fresh sweet Strawberries - 7-8 pcs
  • Coconut Milk: 1 cup
  • Coconut cream: 1/4th cup
  • Maple syrup: 3 tbsps
  • Himalayan Sea salt: 1/4th tbsp
  • Vanilla Extract: 1/2 tbsp
  • Finely Chopped strawberry pieces - of 2 strawberries

Instructions
 

  • Add the strawberries to a blender and pureé them into a smooth red paste
  • Next to a clean bowl add coconut milk, coconut cream, maple syrup, vanilla extract and salt
  • Whisk well until combined
  • Add 4 tablespoons of the strawberry pureé and whisk well until combined and you get a lovely baby pink color to the base batter
  • Check the taste and add more strawberry pureé or maple syrup to adjust according to your taste
  • Lastly add fresh pieces of strawberry to the batter and pot into a popsicle mould or paper cup
  • Freeze for at least 6 hours or for overnight
  • Remove and devour!
Pineapple turmeric Popsicle - vegan popsicles

Pineapple Turmeric Popsicle

Ingredients
  

  • Fresh Pineapple: 1 cup
  • Coconut Milk: 1 cup   
  • Coconut cream: 1/4th cup   
  • Maple syrup: 3 tbsps   
  • Himalayan Sea salt: 1/4th tsp       
  • Vanilla Extract: 1/2 tsp   
  • Turmeric powder: 1/2 tsp
  • Fresh Mint leaves - for garnish (optional)

Instructions
 

  • Step 1: Mix everything in a blender and blend into a smooth pureé
  • Step 2: Pour into a popsicle mould
  • Step 3: Add fresh mint leaves to the batter if you wish
  • Step 4: Freeze for at least 6 hours or overnight
