Pre-heat the oven to 350 degrees
Start by roughly chopping the macadamia nuts – I kept some bits chunky as it enhances the flavour and adds that extra crunch to the cookie
Then to a clean bowl start by adding in Coconut sugar, Egg, Ghee and Vanilla Extract and whisk them together until well combined – you should get a nice brownish creamy liquid
Next add in all the remaining dry ingredients together
Mix the wet and dry ingredients until you get a pretty firm batter
Use your hands if you are unable to get the batter together with the help of a spatula
Make sure you don’t over mix (refer to the video for exact instructions)
Next add in the chocolate chips and nuts and mix them well
Line a baking pan with a parchment paper and pull together small dough balls from the cookie batter and roll them flat so that they resemble a cookie
This batter yields about 20 cookies give or take
Since these cookies don’t spread you can choose to place them close to each other
Bake for 16 minutes
Allow them to cool for about 10 minutes thereafter
