Paleo Macadamia Nut Cookies

These macadamia nut cookies have the perfect chunky monkey texture, are crisp on the outside and soft on the inside. It is also a simple, no fuss recipe and tastes absolutely gorgeous.

Ingredients
  

  • cup Macadamia Nuts (Preferably pre salted) -
  • cup Organic Coconut Sugar
  • 1 Organic Brown Egg
  • ½ cup Pure Desi Ghee
  • ¾ tsp Pure Vanilla Extract
  • 2 cups TPPC Baking Mix https://thepaleopalatecafe.com/product/gluten-free-baking-mix-paleo-keto/
  • ½ tsp Cinnamon
  • ¼ tsp Himalayan Pink Salt
  • ¼ cup Chocolate Chips (We used enjoy life)

Instructions
 

  • Pre-heat the oven to 350 degrees
  • Start by roughly chopping the macadamia nuts – I kept some bits chunky as it enhances the flavour and adds that extra crunch to the cookie
  • Then to a clean bowl start by adding in Coconut sugar, Egg, Ghee and Vanilla Extract and whisk them together until well combined – you should get a nice brownish creamy liquid
  • Next add in all the remaining dry ingredients together
  • Mix the wet and dry ingredients until you get a pretty firm batter
  • Use your hands if you are unable to get the batter together with the help of a spatula
  • Make sure you don’t over mix (refer to the video for exact instructions)
  • Next add in the chocolate chips and nuts and mix them well
  • Line a baking pan with a parchment paper and pull together small dough balls from the cookie batter and roll them flat so that they resemble a cookie
  • This batter yields about 20 cookies give or take
  • Since these cookies don’t spread you can choose to place them close to each other
  • Bake for 16 minutes
  • Allow them to cool for about 10 minutes thereafter
  • Enjoy with favourite beverage
