Paleo / Keto / Vegan Gajar ka Halwa

The Paleo Gajar ka halwa is made from perfectly healthy ingredients and is just as yummy and delicious as the traditional gajar ka halwa recipe. This popular Indian dessert sweet is also suitable for diabetic patients.

- Large sized carrots - 3 (grated)
- Ghee - 3 tablespoons (Palm shortening - if you are a Vegan)
- Almond Milk - 1 cup
- Cardamom powder - 1 teaspoon
- Coconut Sugar - 4 tablespoons (Stevia or Monkfruit sweetner if you follow Keto)
- Chopped dry fruits for garnish
Heat a large skillet (Kadhai) and add in the ghee when adequately hot
Add in the grated carrots and mix well so that the carrots are well coated with ghee
Cover the skillet for 20-25 mins until the carrots are tender
After 25 mins the carrots will have reduced to half its original size and also brightened in color
At this point add in almond milk and cardamom powder
Stir well and cover the skillet again for 20-25 mins until the carrots have absorbed all the milk
After 25 mins when the carrots have absorbed all the milk add in the coconut sugar and cook for anther 5-8 mins
After 5 mins give it a taste and add more sugar according to your need and cook for another 2 mins (each time you add sugar)
Turn off the gas
Garnish with dry chopped fruits before serving
Notes:
- Adjust the sweetness according to your preference
- Use Monkfruit sweetener if you are catering to an audience with sugar intolerances or diabetes
- Always warm the halwa before you eat/serve for best taste
