Its that time of the year again.. when lord Ganesha decends upon earth to be with us for 10 days of festivities and we leave no stone unturned to welcome him in our homes and lives yet again… There is so much of that positive vibe in the air and then there are those rains…
Oh it always rains during this time of the year (at least it has as far as I have seen), and everything just adds to the fervor.. But festivities mean a whole lot of food and a license for most of us to eat irresponsibly.. Well, it aint happening this year honey! Not with The Paleo Palate Café being around… As today I have 2 amazingly crafted delicious paleo modak recipes of Lord Ganesha’s favorite food – The Paleo Modaks – The Chocolate and Vanilla flavored Modaks – to be precise.
Chocolate Modak Recipe
Sometimes I feel humans live for festivities.. like the celebration of everyday life isn’t just enough for us.. like we love the whole family and social gatherings.. and then i think its all for the food, stupid! .. either ways.. we need to make peace with ourselves and be true to the commitment towards health.. And what better way to begin than along with a festival.. Who knows, the lord almighty might just be really impressed and grant you your special wish along with The Paleo Modaks this year…
Vanilla Paleo Modak
Chocolate Modak Recipe
Ingredients
- Freshly grated coconut - 150 grams
- Cardamom powder - 1 teaspoon
- Nutmeg powder - 1 teaspoon
- Dry fruits - a handful of Cashews, Almonds and Walnuts (finely chopped)
- Coconut sugar - 1/4th cup
- Ghee - 1 tablespoon
- Dark Chocolate (85% cacao) - 40 grams
- Coconut oil - 1 tablespoon
- Hemp seeds - 1 tablespoon
- MCT Oil - 1 tablespoon
- Flaxseed powder - 1 tablespoon
- Phyllium husk - 1.5 tablespoons
- Baking Soda - 1 teaspoon
- Cream of Tartar - 1 teaspoon
- Coconut flour - 1/4th cup
Instructions
- Heat a skillet and add 1 tablespoon of ghee to it
- When the skillet is adequately hot add the finely chopped dry fruits and roast them until golden brown
- Now add in freshly grated coconut and cook this mixture for about 2-3 minutes
- Add in the coconut sugar, cardamom powder and nutmeg powder and cook for another 3-4 minutes until the sugar is thoroughly mixed with the coconut and the spices
- Test the mixture by giving it a little taste and add more sugar if required
- Turn off the gas and set it aside to cool
- Set the oven to pre heat at 350 degrees
- Now take bowl and add in 40 grams of dark chocolate and 1.5 tablespoons of coconut oil – Microwave this for 1 minute by removing the bowl after 30 seconds and stirring it before putting it in again (This is to make sure that the chocolate does not burn)
- After the coconut mixture cools down take a large bowl and add the mixture to it
- Now add the melted dark chocolate, hemp seeds, MCT oil, flaxseed powder, coconut flour, baking soda, cream of tartar and phyllium husk to the mixing bowl
- Mix well until all the ingredients are thoroughly incorporated
- Now pull apart a small portion and form a circular shape with the help of both your hands and make a small cone like structure with the tip pointing towards you
- Line a muffin tin with muffin cups and one by one fill the conical modaks in the muffin cups
- Bake for 15 minutes
- After 15 minutes remove and let and cool down
- Offer it to Lord Ganesha before you gobble them all up quickly
Vanilla Modak: Treat your guests with a healthy vanilla flavoured paleo modak this festive season
- Almond Milk - 1 cup
- Coconut Sugar - 2 tablespoons
- Freshly grated coconut - 250 grams
- Cardamom powder - 1 teaspoon
- Nutmeg powder - 1 teaspoon
- Ghee - 1 tablespoon
- Pure Vanilla Extract - 1 teaspoon (gluten free and alcohol free)
Directions:
- Heat a skillet and add 1 cup almond milk and coconut sugar to it
- Mix this and simmer it for 30 minutes by stirring it in between
- The quantity of the milk will have reduced by half and it should also thicken/condense to form a semi solid like consistency
- Remove the mixture and set it aside to cool
- Heat another skillet and add 1 tablespoon of ghee to it
- Now add in freshly grated coconut and cook this mixture for about 2-3 minutes
- Add in the cardamom powder and nutmeg powder and mix well until everything is thoroughly incorporated
- Cook for another minute or so and remove the mixture and set it aside to cool
- After the coconut mixture and the semi solid milk both have cooled down mix them together and add in pure vanilla extract
- Mix it well until everything has combined together
- Now pull apart a small portion and form a circular shape with the help of both your hands and make a small cone like structure with the tip pointing towards you
- Line them all up in a circular plate and keep the modaks in the fridge for at least one hour before they are ready to consume
- If you still feel that the consistency of the modak is loose put it in the freezer for 10 minutes and that should work the trick for you (if you have to serve immediately)
- Else leave the modak in the fridge overnight and it should be perfect for consuming
- Don't forget to offer it to lord ganesha along with your prayers
