Macadamia Nut Cookies – Gluten Free | Paleo

Our Paleo Macadamia Nut cookies are perfect as a mid-day snack, for that mid night craving and goes perfectly well with your coffee / tea.

In fact, these Paleo Macadamia Nut cookies are probably everything id want in a cookie. Its nutty, has a nice chunky-monkey flavour and is pretty much loaded with chocolate making it a perfect snack / dessert.

It’s crazy how I lived without Macadamia nuts all this while. We dint really see them as much in India and I kinda did not have a chance to but them when I moved to Canada as well. However, when I did have the opportunity recently I was pleasantly surprised. I knew I had to bake with them or at least use them in some recipe somewhere.

Nut milk seemed too overrated and salads wouldn’t do any justice so I literally googled ways in which I could use macadamia in a recipe and nut cookies kept popping up everywhere and hence enter – Paleo Macadamia Nut cookies.

This is absolutely one of those recipes that is worked backwards i.e. I made the cookies just because I had to put those nuts to use. How nutty is that?1?

The recipe was an instant hit with adults and kids alike. I made it at least 3 times before I put it up on the blog and each time a batch of 20 cookies has never lasted for more than 3 days. Insane stuff I tell you!

Its a shame that most schools are nut free otherwise it would also form for a great lunch box item. My daughter loves picking out all the chocolate chips before she can eat the cookie and we also make a small game of mathematics on how many chocolate chips have been devoured and how many are remaining and of course that’s also the way our cookie crumbles!

Baking cookies also means you get to spend that extra bit of time with your kids, get to know how they think and those bits of chocolate make learning mathematics fun too.

Again, this recipe is pretty easy and adding chocolate is optional but Id highly recommend you to put the chocolate for the chunky monkey texture. While we like to use enjoy life chocolate chips you can use any chocolate of your choice.

Like most of my dessert recipes these Paleo Macadamia Nut cookies are already balanced on sweetness. However if you feel that its a little too much for you to handle it – just level it down or replace it with a low carb sweetener and if you do make any changes make sure you leave a comment below on how it turned out.

I have made these cookies using pre salted macadamia nuts and unsalted ones – and while there was no big difference between the two versions I somehow felt that the ones made using pre salted nuts just turned out better. I am still unable to point of what exactly about it was better. I guess it’s just one of those things that you know for yourself but can’t really explain it to someone else. Moral of the story? – Choose your nuts wisely!

I also love how simple this recipe is. It needs no electrical device and is so easy to put together each time. No fuss recipes that taste gorgeous is something that’s my calling.

These macadamia nut cookies have the perfect chunky monkey texture, are crisp on the outside and soft on the inside. It is also a simple, no fuss recipe and tastes absolutely gorgeous.

Ingredients
  

  • cup Macadamia Nuts (Preferably pre salted) -
  • cup Organic Coconut Sugar
  • 1 Organic Brown Egg
  • ½ cup Pure Desi Ghee
  • ¾ tsp Pure Vanilla Extract
  • 2 cups TPPC Baking Mix https://thepaleopalatecafe.com/product/gluten-free-baking-mix-paleo-keto/
  • ½ tsp Cinnamon
  • ¼ tsp Himalayan Pink Salt
  • ¼ cup Chocolate Chips (We used enjoy life)

Instructions
 

  • Pre-heat the oven to 350 degrees
  • Start by roughly chopping the macadamia nuts – I kept some bits chunky as it enhances the flavour and adds that extra crunch to the cookie
  • Then to a clean bowl start by adding in Coconut sugar, Egg, Ghee and Vanilla Extract and whisk them together until well combined – you should get a nice brownish creamy liquid
  • Next add in all the remaining dry ingredients together
  • Mix the wet and dry ingredients until you get a pretty firm batter
  • Use your hands if you are unable to get the batter together with the help of a spatula
  • Make sure you don’t over mix (refer to the video for exact instructions)
  • Next add in the chocolate chips and nuts and mix them well
  • Line a baking pan with a parchment paper and pull together small dough balls from the cookie batter and roll them flat so that they resemble a cookie
  • This batter yields about 20 cookies give or take
  • Since these cookies don’t spread you can choose to place them close to each other
  • Bake for 16 minutes
  • Allow them to cool for about 10 minutes thereafter
  • Enjoy with favourite beverage
